Pink Cloud Sugar Cookies

  • 2 cups butter
  • 2 cups sugar
  • 2 eggs
  • 2 tsp vanilla
  • 6 cups flour
  • 3 tsp baking powder
  • 1 tsp salt

Cream butter and sugar.  Add eggs and vanilla.  Mix dry ingredients and add to butter mixture.  Mix well.

Roll to desired thickness between 2 sheets of parchment paper.  Refrigerate 10 minutes.  Cut and bake on parchment paper lined cookie sheet for 12 minutes in a 350 degree oven.  Edges should be brown.

Pink Cloud Icing

  • 3 TBSP meringue powder
  • 1 tsp vanilla
  • 6-8 TBSP luke warm water
  • 1 lb powdered sugar

Combine all ingredients in an electric mixer for 5 to 6 minutes on high speed.
